Gourmet Italian food is flying high with Cathay Pacific Airways through July 31. For a limited time, Cathay has partnered with Tosca, the Michelin-star restaurant at The Ritz Carlton, Hong Kong, to create its in-flight meals. Select flights departing from the city will present its first and business class passengers with menus designed by the restaurant’s chef, Pino Lavarra, that combine classic Italian dishes with modern epicurean twists. “I was particularly intrigued by the approach of creating intense flavor pairings that can offset the impact flying at high altitude has on the sensitivity of our taste buds,” Lavarra explained. Think buffalo salami with grilled focaccia to start, cannelloni with eggplant and pancetta stew, fillet of sea bass dressed in pesto, and traditional tiramisu as a sweet finale. Routes with the offering include a handful of regional—four hubs in Japan as well as Seoul, and Singapore—as well as long-hauls to major cities in South Africa, Australia, New Zealand, Europe, the U.S., Russia, and Canada.
