Dutch flag carrier airline KLM has partnered with Brazilian chef Rodrigo Oliveira for its new menu on flights from Brazil to Amsterdam. Rodrigo is the owner of Mocotó in São Paulo which has earned two stars by Brazilian travel guide Guia Quarto Rodas. He was voted Brazil’s Chef of the Year and won Best New Restaurant in the same year. The new meals, including Caiçara couscous and grilled perch fillet in moqueca sauce, are available in both business and economy class ahead of the World Cup. Said Oliveira, “My biggest motivation was the challenge to translate our cuisine to the world of aviation. The high standards that KLM demands convinced me that this was the ideal moment to introduce our cuisine to a diverse, vast, and global public.” KLM has said Oliveira’s culinary philosophy complements its views on sustainability as he only uses local, seasonal ingredients.
