Christophe Schmitt and Gaëtan Fiard together form one of Paris’s best chef duos, bien sûr. The former is the sous chef and the latter the head station chef at Michelin-awarded restaurant Le Diane at the venerable Hôtel Fouquet’s Barrière; the former is the winner of Le Taittinger Prix Culinaire 2012 and the latter, the winner of the Mondial Des Art Sucrés 2014—the confectionery world championships. In other words, they know how to cook. For the second consecutive year, the two are returning to Banyan Tree Ungasan, Bali’s signature restaurant, Ju-Ma-Na, for a special culinary event, aptly named “Le Duo Parisien.” “Coming from the heart of Paris, not only do we face the city’s upstanding reputation in gastronomy, we must also excite Europe’s most discerning clientele on a daily basis,” said chef Fiard. “We are proud to share our savoir-faire and our passion, direct from the Champs-Elysée. I cannot wait to go back and join the camaraderie with our friends at Banyan Tree.”

From August 1 through 9, the two will be lending their precise techniques and most discerning of tastes to the award-winning Banyan Tree restaurant, serving a four-course set menu, a degustation menu, and à la carte dishes specially created for the event. Among them is a scallop and mango carpaccio with crabmeat salad marinated in Nepalese pepper; cauliflower with smoked salmon, crème fraiche, and avruga caviar; lamb with thyme, turnip, and almond and barberry lamb jus; and a chocolate and citrus entremets with tuile and orange yuzu sorbet. Wine pairings are recommended for each as well. For those who wish to stay at the hotel during this period, the Bali Retreat package accompanying the event offers special room rates for single-night stays along with breakfast at the resort’s Bambu restaurant and afternoon tea at Ju-Ma-Na; double-night stays offer airport transfers as well.
