The Secret Mermaid
A Japanese-accented eatery by day and speakeasy by night, the Secret Mermaid is part tasting room for spirits distributor Liberty Spirits Asia and part drinking hole for the after-hours CBD crowd. Despite its small 20-seat size, the bar’s inventory is impressive, highlighted by dozens of craft spirits (think: smoked salmon-infused vodka and corn whiskey) from 16 artisanal distilleries in the U.S. Have the spirits neat via the tasting flights or layered in  cocktails such as the Lemon Drop, a swizzle of two organic vodkas with sugar (10 Collyer Quay B1-08; 65/9363-7641).
