Forget macaroons, cupcakes, and all the hoopla over cronuts—these days, it’s the humble éclair’s time to shine in the sugary spotlight. Leading the charge are the innovative torpedo-shaped confections from Paris’s L’Eclair de Génie (14 Rue Pavée; 33-1/4277-8511), a “concept” patisserie opened in the Marais by former Fauchon executive pastry chef Christophe Adam. The standard chocolate glazing and cream filling are gone, replaced by a rainbow of seasonally changing flavors that might include passion fruit, yuzu, caramelized pecans with Madagascar vanilla cream, or pistachio and orange. Come December, look for a special limited-time addition to the lineup: a chocolate-and-truffle éclair inspired by Coco Chanel’s little black dress.
