Shangri-La Singapore to Debut Waterfall Brunch

Singapore is by no means starved of high-quality places in which to while away a Sunday over brunch, but the guiding principle in this city is the more the merrier, and so it is at brunch, which is why the launch of brunch at Shangri-La Singapore’s Waterfall Café is welcome news.

Chef Stephane Cocu has placed the emphasis on marrying Mediterranean flavors with particular attention to ingredients’ provenance— rib-eye from New Zealand cattle and sashimi-grade Hokkaido scallops are free from hormones and antibiotics. Alaskan king crab and poached prawns on ice are available from Waterfall’s counters beforea choice of breakfast dishes and à la carte main courses—Italian orzo pasta salad and French toasted Poliâne bread with olive oil and joselito jamón—before the brunch is rounded off with a board of chocolate mousse, cacao crumble, cheesecake, crème brûlée, and lychee soup.

White wines include Abside Verdejo from Spain and Riba White, Quinta da Atela from Portugal, while the reds on offer are Saint Chinian Domaine Combebelle from France and Darien Tempranillofrom Spain. The rosé wines include the pleasingly named Más Amor (a mix of Grenache and Carignan grapes), as well as Massard and Brunet, which hail from Cataluña.

Sunday brunch is priced at US$63 per adult with one bottle of organic soda or US$95 per adult with free-flowing wine. Brunch is served from 11 a.m. to 4 p.m. every Sunday.
