While the 550 hand-blown glass utensils that furnish the restaurant’s ceiling are almost as striking as the views out over Victoria Harbour, few would dispute that the real draw lies elsewhere at InterContinental Hong Kong’s signature restaurant, Spoon. The Alain Ducasse restaurant has scooped up two Michelin stars since opening, and today sees the start of a new à la carte offering designed by Ducasse. Reserve a table next to the floor-to-ceiling glass and expect dishes such as beef tournedos with black olives and asparagus, steamed plaice with caviar, gilt-head bream with girolle mushroom-shallot-tomato preserve, and rock lobster with artichoke and black truffle.
