A Michelin-Starred Roman Venue Pops Up at Singapore’s Sofitel Sentosa

For three nights only, acclaimed chef Heinz Beck will be in the kitchen to prepare contemporary Italian cuisine paired with wines from Ômina Romana.

Gourmands in the Lion City can have a taste of la dolce vita through a special dining experience at Sofitel Singapore Sentosa Resort & Spa, where chef Heinz Beck from Rome’s three-Michelin-starred La Pergola is serving up his innovative Italian fare from Sunday, October 30, to Tuesday, November 1 at The Cliff Restaurant. This exclusive five-course wine dinner begins at 7 p.m. as the sun sets over the Singapore Strait, and also showcases fine Italian vino from Ômina Romana. The family-run winery’s owner Katharina Boerner will be in attendance to lend her wine-pairing expertise during the meal.

The meal starts off with a series of aperitivi, ranging from ripened fruits served on a bed of taleggio cheese and black truffle to a tartlet with a creamy veal-and-mushroom filling. Buttery amberjack with oxidized chocolate and scampi with a touch of sweet peppers is paired with the Ômina Romana Viognier Ars Magna 2018, whose fruity flavor profile is said to be reminiscent of orange marmalade and peach danish. The following course — a primo piatto of capon tortellini, pumpkin purée, and grana Padano sauce topped with flakes of black truffle — will be savored with the oaky Ômina Romana Chardonnay Ars Magna 2018.

Mains takes the form of a cereal-crusted baked loin of lamb topped with pearls of goat’s cheese, a fitting counterpart to the Ômina Romana Ceres 2016, which yields notes of star anise and cherry. Beck will then present the final course: an iced sphere of fruits served on a dollop of tea-flavored chocolate cream, complemented with Ômina Romana Janus Geminus 2015.
