Thanks to an extensive remodeling of Ebony, the upscale grill at the Mandarin Oriental, Guangzhou, southern China now has its first gin bar. JIN at Ebony boasts nearly 40 variants of the spirit, ranging from the tried-and-true (Tanqueray, Hendrick’s, et al.) to boutique labels like Scotland’s Eden Mill and Monkey 47, a botanically complex distillation from Germany. Also on the menu are half a dozen house-infused gins steeped in flavors such as goji berries and oolong tea, best sampled at happy hour when free-flow gin cocktails and complimentary bar bites are on offer. With its marbled counters and relaxed garden setting, Ebony gives a whole new meaning to the term “gin palace.” —James Louie
