The first five-star resort to open in Sanur in four decades has brought a long-overdue dose of luxury to the sleepy seaside village. Spread over four hectares of palm-studded gardens on Bali’s southeast coast, the hotel has 94 spacious suites and 26 soon-to-open villas, all with lattice-work screens, gleaming mahogany floors, seashell-embossed walls, and views of either the lush grounds or the Indian Ocean. Nyala, a beachside grill, is strong on Indonesian dishes such as fried duck with sambal and kambingmekuah (slow-braised lamb shoulder in fragrant coconut gravy), while local flavors also imbue the bijou spa, where Balinese-coffee scrubs are the order of the day.
