The W Retreat & Spa Bali will welcome the contemporary cuisine of Australian-born chef Dallas Cuddy this February. Cuddy, a Michelin-starred chef, will take over for the W’s STARFISH BLOO chef Kevin Chung from February 5 to 9. Counting the influences of Gordon Ramsay and Ian Curley, Cuddy has cut his teeth at esteemed restaurants such as The Point’s kitchen in Melbourne and London’s Nobu. He currently works at The Prime Society in Singapore. During his guest stint, Cuddy will rework STARFISH BLOO’s signature local seafood menu with his unique culinary aesthetic with a hint of modern Japanese. Four dining experiences will be offered during his visit including a three-course lunch menu from Wednesday to Saturday, a five-course-tasting menu matched to wine from Wednesday to Saturday, and on Friday night, a five-course wine dinner will be available in ICE Bar. The week of gastronomic pleasures will conclude with STARFISH BLOO’s gluttonous brunch buffet on Sunday, feauturing a few of Cuddy’s favorites.
