Filling the gap between Singapore’s bustling hawker markets and formal dining rooms comes The Provision Shop, a new concept restaurant from the venerable Unlisted Collection. Located in the central Everton Park neighborhood, the restaurant occupies the common space of a government-built flat. A gourmet deli-cum-eatery, The Provision Shop has an offering of fresh salads, sandwiches, and lighter fare, available for dine-in and takeaway. The interior is reminiscent of a modern European delicatessen with restored wood panels giving the space an industrial edge. Thirty patrons can be seated at tables fitted with mahjong table legs and tabletops made from brass and copper sheet metal, cork, and felt. Anthony Yeoh, executive chef of Cocotte at the Wanderlust hotel, will serve as the culinary director of The Provision Shop and bring his vision of gourmet takeaway food to discerning clients. Highlights of the menu include the Nuts About Smoked Salmon salad with mint, salmon roe, walnuts and apple, and a brunch selection planned for Sundays including homemade pastries and ice cream with flavors such as Maldon sea-salt vanilla and raspberry and dark chocolate.
