The much applauded Pierre Gagnaire will return to his eponymous restaurant Pierre in the Mandarin Oriental, Hong Kong this month to celebrate the venue’s second Michelin star. Gagnaire, who describes his culinary philosophy as “facing tomorrow but respectful of yesterday”, will prepare a menu based on the haute cuisine delicacy of black truffles. Starting at US$375 a head, diners can nosh on a five-course meal including dishes like grilled line-caught sea bass with aged white balsamic vinegar and a poached-then-roasted breast fillet of farm hen from Bresse, all topped with ground black truffle to bring out rich flavors. The menu will be on offer from February 26 to March 5 and can be ordered as individual dishes for lunch and dinner or as part of the set menu. Gagnaire himself will be present throughout the period to greet guests or accept congratulations on his latest Michelin win.
