Housed in Singapore’s futuristic Flower Dome at Gardens by the Bay lies Jason Atherton’s Pollen. Following ten years under Gordon Ramsey, Atherton has branched out with a string of acclaimed solo projects including this collaboration with hotelier-cum-restaurateur Loh Lik Peng. Pollen stays cool with sub 20 degree weather for the dome’s unique vegetation and serves up dishes like Sydney rock oysters in a yuzu-scented dashi broth, or John Dory basking in light prawn-head bisque. The restaurant is now in full swing following its June 2012 opening with afternoon tea service as the latest addition to the Mediterranean-inspired menu. Afternoon tea is served at Pollen’s bistro on the upper terrace with treats such as Scotch Eggs with Piccadilly Relish, Seared Rangers Valley Beef Brioche, home-made Pollen scones, and seasonal tea cakes. Tea service is available daily from 3 p.m. to 5 p.m. from US$30 per person. Patrons enjoying tea can also look forward to personalized buggy transfers to and from the Flower Dome and access to the bayside gardens.
